Honey vinegar is the oldest vinegar known to man: it appears to have been used by the ancient Egyptians many years before the discovery of the vine. With a pleasantly sour taste, light and digestible, golden in color and very fragrant, honey vinegar is particularly rich in enzymes and mineral salts. The preparation begins with a very fine acacia honey which is diluted in water and fermented slowly by dosing temperature and aeration. The acidity is slightly lower than that of classic wine vinegar. Honey vinegar is excellent as a dressing for salads, vegetables, sauces, sweet and sour, fruit salads, fish.
